  • 28 oz can crushed san marzano tomatoes
  • 4 cups chicken stock
  • 1 cup cooked gluten-free orzo (approximately 1/2 cup uncooked)
  • 1/4 cup torn fresh basil leaves (or 1 tablespoon dried if necessary)
  • Salt and black pepper, to taste


Instructions

  1. Sauté chopped onion in olive oil over medium heat until translucent (about 5 minutes). Add carrots and garlic; cook until fragrant (2-3 minutes).
  2. Pour in crushed tomatoes and chicken stock; stir well and add crushed red pepper.
  3. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
  4. Stir in cooked orzo and cream; season with salt and black pepper. Simmer for an additional 5 minutes.
  5. Serve hot, garnished with fresh basil.
