  • 1/4 teaspoon chili flakes
  • 1 can cooked butter beans
  • 1 can chopped tomatoes
  • 4 cups vegetable stock
  • 1/2 cup white apple vinegar
  • Fresh basil
  • Fresh spinach
  • 150g pasta


Instructions

  1. Begin by dicing the onion, carrot, celery, and potato; mince the garlic.
  2. In a large saucepan, heat olive oil over medium heat. Add diced vegetables with salt and sauté for about 5–10 minutes until softened. Stir in minced garlic and cook until fragrant.
  3. Add tomato purée, oregano, smoked paprika, and chili flakes; cook for an additional 2–3 minutes.
  4. Pour in apple vinegar followed by butter beans, chopped tomatoes, and vegetable stock. Season with salt and pepper; bring to a boil then reduce heat to simmer for about 10–15 minutes.
  5. Add pasta according to package instructions until nearly al dente; mix in spinach and basil until wilted.
  6. Serve hot garnished with fresh herbs, olive oil drizzle, nutritional yeast, and extra chili flakes if desired.
