  • 1/4 cup ice-cold water
  • 1/4 teaspoon salt
  • 2 cups pumpkin purée
  • 1 1/2 cups sliced cremini mushrooms
  • 1 1/2 teaspoons fresh sage, finely chopped
  • 1/4 cup heavy cream
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon freshly ground black pepper
  • Salt to taste
  • 1 tablespoon olive oil


Instructions

  1. Prepare the crust by mixing flour and salt, cutting in butter until crumbly. Add ice water and form into a disk; chill for 20 minutes.
  2. Preheat oven to 375°F (190°C). Roll out dough, transfer to tart pan, and pre-bake for about 15 minutes.
  3. Sauté mushrooms in olive oil until golden brown; set aside.
  4. In a bowl, whisk pumpkin purée with cream, sage, nutmeg, and pepper. Fold in sautéed mushrooms.
  5. Fill the pre-baked crust with the filling and bake for an additional 25-30 minutes until set.
