Ingredients

  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 3 tbsp olive oil
  • Juice of 1/2 lime
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss sweet potato wedges with olive oil, smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season the chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes on each side until cooked through.
  4. Mash the avocado in a bowl with lime juice, salt, and pepper to make guacamole.
  5. Combine halved cherry tomatoes with diced avocado and red onion in another bowl; toss with olive oil and seasoning.
  6. Slice the grilled chicken and assemble your bowl by layering sweet potato fries, sliced chicken, guacamole, and tomato-avocado salad.
