Ingredients
- 1 large chicken breast
- 2 medium sweet potatoes
- 1 ripe avocado
- 1 cup cherry tomatoes, halved
- 3 tbsp olive oil
- Juice of 1/2 lime
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Toss sweet potato wedges with olive oil, smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.
- Season the chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes on each side until cooked through.
- Mash the avocado in a bowl with lime juice, salt, and pepper to make guacamole.
- Combine halved cherry tomatoes with diced avocado and red onion in another bowl; toss with olive oil and seasoning.
- Slice the grilled chicken and assemble your bowl by layering sweet potato fries, sliced chicken, guacamole, and tomato-avocado salad.
