Ingredients
- 2 boneless, skinless chicken breasts
- 300g Brussels sprouts, halved
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper to taste
- Juice of lemon
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 2 cloves garlic, minced
- ½ cup grated Parmesan
- Salt & pepper to taste
Instructions
- Preheat the grill or grill pan to medium-high heat.
- In a mixing bowl, season the chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Toss halved Brussels sprouts in olive oil with salt and pepper on a baking sheet; roast at 200°C (390°F) for about 20 minutes until crispy.
- For the sauce, melt butter in a saucepan over medium heat; stir in flour for a roux. Gradually add milk while whisking until smooth. Stir in minced garlic and simmer until thickened; mix in grated Parmesan cheese.
- Slice grilled chicken and assemble in bowls with roasted Brussels sprouts. Drizzle generously with the creamy sauce.
