  • 1 teaspoon dried dillweed

  • 3 cups low-sodium chicken broth
  • 2 Tablespoons freshly squeezed lemon juice
  • Fresh parsley for garnish


Instructions

  1. Rinse the rice under cold water until clear, then drain.
  2. Heat olive oil in a saucepan over medium heat. Sauté onions and garlic until soft.
  3. Add oregano and dillweed; cook for another 30 seconds.
  4. Stir in the rinsed rice and toast for about 1 minute.
  5. Pour in the chicken broth and season with salt. Bring to a boil, then reduce heat to low and simmer covered for 15-18 minutes until liquid is absorbed.
  6. Mix in lemon zest and juice along with chopped parsley before serving. Fluff with a fork.
  7. Let it rest covered for an additional five minutes before serving.
