- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp chopped dill
- Pinch of salt
Instructions
- In a large mixing bowl, combine 1 lb ground chicken, ½ cup breadcrumbs, 1 large egg, 2 minced cloves of garlic, ¼ cup finely chopped red onion, 2 tbsp chopped fresh parsley, 1 tbsp chopped fresh dill, 1 tsp lemon zest, ½ tsp salt, and ¼ tsp black pepper. Mix until just combined.
- Form the mixture into 1.5-inch meatballs and place them on a parchment-lined baking sheet.
- Drizzle meatballs with 1 tbsp olive oil and bake in a preheated oven at 400°F (200°C) for 18–20 minutes until golden brown.
- For the tzatziki sauce, mix together 1 cup Greek yogurt, ½ grated cucumber (drained), 1 minced clove of garlic, 1 tbsp lemon juice, 1 tbsp olive oil, and a pinch of salt. Chill until serving.
- Serve meatballs warm with tzatziki sauce on the side or drizzled on top.
