Ingredients
- 2 lbs beef chuck, cubed
- 3 tbsp olive oil
- 1 onion, diced
- 2 ribs celery, diced
- 4 carrots, diced
- 3 garlic cloves, minced
- ¾ cup dry red apple vinegar
- 6 cups low-sodium beef broth
- 1 cup pearled barley
- Fresh thyme, parsley, salt, and pepper
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides; remove and set aside.
- In the same pot, sauté onion, celery, and carrots for about 5 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Deglaze by adding red apple vinegar and scraping up browned bits; reduce by half.
- Return seared beef to the pot, add beef broth and fresh thyme. Bring to a boil then reduce to simmer for 45 minutes.
- Stir in pearled barley; continue simmering for an additional 45–60 minutes until barley is tender.
- Check seasoning before serving; adjust salt and pepper as needed.
