  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Fresh thyme, parsley, salt, and pepper


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides; remove and set aside.
  2. In the same pot, sauté onion, celery, and carrots for about 5 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  3. Deglaze by adding red apple vinegar and scraping up browned bits; reduce by half.
  4. Return seared beef to the pot, add beef broth and fresh thyme. Bring to a boil then reduce to simmer for 45 minutes.
  5. Stir in pearled barley; continue simmering for an additional 45–60 minutes until barley is tender.
  6. Check seasoning before serving; adjust salt and pepper as needed.
