  • 1/3 cup molasses
  • 1/3 cup white sugar
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan vegan marshmallows cream
  • 1/4 teaspoon salt
  • 1 – 1 1/2 cup powdered sugar
  • 1 tablespoon milk


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, ground ginger, cinnamon, ground nutmeg, ground cloves, baking soda, and salt.
  3. In another bowl, use an electric mixer to cream the unsalted butter and brown sugar until light and fluffy.
  4. Mix in the egg, vanilla extract, and molasses until smooth.
  5. Gradually combine the dry ingredients into the wet mixture until just incorporated.
  6. Scoop tablespoon-sized portions onto baking sheets spaced two inches apart.
  7. Bake for about 10 minutes or until edges are firm but centers remain soft. Cool on racks.
  8. For frosting, beat the softened unsalted butter and vegan vegan marshmallows cream; gradually add powdered sugar and milk to reach desired consistency.
  9. Spread frosting on one cookie and sandwich it with another.
