Ingredients

Scale
  • 5 oz raisins (or sultanas)
  • 5 oz dried red currants
  • 1/2 cup whole milk (lukewarm)
  • 2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tsp Christmas spice mix
  • 3/4 cup softened butter
  • 2 eggs (room temperature)
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar (for coating)

Instructions

  1. Prepare the dried fruits by soaking raisins and currants in boiling water for about 15 minutes.
  2. Activate the yeast by mixing lukewarm milk, yeast, and 1 tablespoon of sugar; let froth for 5-10 minutes.
  3. In a large bowl, combine flour, ground almonds, Christmas spice mix, and remaining sugar.
  4. Mix in the activated yeast mixture, softened butter, vanilla extract, and eggs until well combined.
  5. Drain the soaked fruits and stir them into the dough along with candied citrus peel.
  6. Knead the dough until smooth and elastic; let rise in a warm spot for 1-2 hours.
  7. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  8. Shape dough into small balls (about 2 oz each) and place on the baking sheet.
  9. Bake for about 15-20 minutes until golden brown; cool slightly before rolling in powdered sugar.
