Instructions

  5. Gradually pour in the vegetable broth while stirring to avoid lumps.
  6. Once mixed well, add the diced Yukon Gold potatoes along with dried thyme, dill, sea salt, black pepper, and smoked paprika if using.
  7. Bring everything to a boil, then reduce heat to low and allow the soup to simmer uncovered for 20–25 minutes until the potatoes are fork-tender.
