  • 2 large boneless, skinless chicken breasts
  • 12 oz twisted pasta (gemelli or fusilli)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese (for sauce)
  • Cajun seasoning
  • Smoked paprika


Instructions

  1. Cook the twisted pasta in salted boiling water until al dente; drain and set aside.
  2. Season the chicken strips with Cajun seasoning and smoked paprika. Press grated Parmesan onto the chicken.
  3. Heat olive oil and 2 tbsp of butter in a skillet over medium-high heat. Sear the chicken until golden brown and cooked through; remove from skillet.
  4. In the same skillet, melt remaining butter and sauté garlic until fragrant. Add heavy cream and chicken broth; bring to a simmer.
  5. Stir in cream cheese until smooth, then add mozzarella, cheddar, and Parmesan cheeses until thickened.
  6. Mix in cooked pasta and simmer to absorb flavors before serving with the sliced chicken on top.
