  • 600 g baby potatoes, halved
  • 450 g chicken breast, cut into cubes
  • 200 g mushrooms, sliced
  • 1 red bell pepper, diced
  • 4 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, toss halved baby potatoes with 2 tbsp olive oil, garlic powder, dried oregano, salt, and pepper.
  3. Spread potatoes on a baking sheet in a single layer and roast for 20-25 minutes until golden and crispy.
  4. While the potatoes roast, heat 2 tbsp olive oil in a skillet over medium-high heat.
  5. Season chicken cubes with salt, pepper, paprika, and Italian herbs; add to skillet and cook until golden brown.
  6. Add minced garlic, sliced mushrooms, and diced red bell pepper to the skillet; cook for an additional 5-6 minutes until vegetables are tender.
  7. Serve chicken garnished with fresh parsley alongside roasted potatoes.
