Ingredients
- 1 salmon fillet
- 1 tbsp butter
- 1 garlic clove, smashed
- 1 tsp paprika
- Salt & pepper to taste
- 2 medium potatoes, peeled & diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 cup baby carrots
- 1 tbsp butter
- 1 tsp honey or maple syrup
- Pinch of chili flakes (optional)
- 1 cup broccoli florets
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C). Toss diced potatoes in olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon with paprika, salt, and pepper; cook skin-side down for 4-5 minutes per side until fully cooked.
- Steam baby carrots for about 5 minutes until tender. In a small pan, melt butter and stir in honey (or maple syrup) and chili flakes; glaze the carrots for 1-2 minutes.
- Steam broccoli florets for about 3-4 minutes until bright green. Lightly sprinkle with salt.
- Serve the salmon alongside the roasted potatoes, glazed carrots, and steamed broccoli.
