  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ½ cup milk


Instructions

  1. Boil cubed potatoes in salted water until tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet over medium heat, warm olive oil and butter. Season chicken with garlic powder, salt, and pepper; cook until golden brown (6-7 minutes per side). Let rest.
  3. Sauté onions in the same skillet until translucent (3-4 minutes). Add mushrooms, peppers, and minced garlic; cook until softened (5-7 minutes). Season to taste.
  4. Serve mashed potatoes topped with sliced chicken and sautéed vegetables. Garnish with chopped parsley.
