  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta cheese (cubed)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large deep skillet over medium-high heat, heat olive oil and cook the chicken seasoned with Cajun seasoning and spices until golden brown (6–8 minutes). Add butter and minced garlic, stirring to coat.
  2. Remove the chicken; pour chicken broth into the pan, bring to simmer, then add rotini pasta. Cover and cook until tender (10–12 minutes).
  3. Reduce heat; stir in heavy cream, Velveeta, and Parmesan until melted and creamy.
  4. Return chicken to the skillet; mix well to combine.
  5. Top with mozzarella cheese; cover for 2–3 minutes until melted.
