Ingredients

Scale
  • 1.5 pounds beef stew meat (cut into bite-sized pieces)
  • 1 pound baby potatoes (halved)
  • 4 tablespoons unsalted butter (melted)
  • 3 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Gather all ingredients and prepare the beef and baby potatoes by cutting them to size.
  2. Optional: Parboil the halved baby potatoes for a few minutes to soften.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides.
  4. In a mixing bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make the garlic butter sauce.
  5. Place the halved baby potatoes in the slow cooker with the seared beef and pour the garlic butter sauce over everything; add beef broth for moisture.
