  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season beef chunks with salt and pepper; brown in batches until well-seared. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and garlic until the onion is translucent.
  4. Sprinkle flour over the vegetables; stir to coat evenly.
  5. Return beef to the pot; add tomato paste and bouquet garni. Bring to a boil, then reduce heat to simmer for about 2 hours.
  6. Sauté mushrooms separately until golden brown; add them to the stew during the last 30 minutes of cooking.
