  • 30 g unsalted butter
  • 1 large leek, finely chopped
  • 1 medium carrot, chopped
  • 5 medium potatoes, peeled and cubed
  • 1.25 liters fish stock
  • 450 g salmon fillets, cut into cubes
  • 150 ml double cream
  • Fresh dill, chopped
  • Salt and pepper


Instructions

  1. In a large heavy-bottomed pot, melt the butter over medium heat. Add the chopped leek and sauté for 7–8 minutes until softened.
  2. Stir in the carrot and potatoes, then pour in enough fish stock to cover the vegetables. Cover and cook for about 10 minutes until almost fork-tender.
  3. Gently add the salmon chunks and pour in the double cream. Simmer for an additional 3–4 minutes until the salmon is cooked through.
  4. Stir in the chopped dill, simmer for another minute, and season with salt and pepper before serving.
