- 2 tablespoons fresh chopped cilantro
- 1/4 cup diced red onion
- 1/2 cup diced cherry tomatoes
- 1 jalapeño (sliced, optional)
- 1 large avocado (sliced)
- 1 (15 ounce) can fire roasted corn (drained)
Instructions
- Marinate shrimp in olive oil, lime juice, smoked paprika, cumin, chili powder, garlic powder, salt, black pepper, cayenne pepper, and cilantro for 15 minutes.
- Cook the rice according to package instructions.
- Heat a skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
- Assemble bowls starting with rice as the base; add shrimp and top with diced onions, tomatoes, jalapeños, avocado slices, corn, and cilantro.
