Ingredients

Scale
  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, diced (red or green)
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon honey (or brown sugar)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions

  1. If not already cooked, prepare rice according to package instructions. Set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  4. Once chicken is cooked, add the minced garlic and ginger to the skillet. Sauté for an additional 1-2 minutes until fragrant.
  5. Add the diced bell pepper and broccoli florets. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  6. Add the pineapple chunks to the skillet and stir gently to combine all ingredients.
  7. In a small bowl, mix soy sauce and honey (or brown sugar). Pour this mixture over the chicken and vegetables in the skillet. Stir well to coat everything evenly.
  8. Add the cooked rice to the skillet and stir thoroughly to combine all ingredients. Cook for an additional 2-3 minutes to heat through.
  9. Taste your dish and adjust seasoning with more soy sauce or honey if needed.
  10. Remove from heat and garnish with chopped green onions and sesame seeds if desired.
