  • 1/3 cup strawberry jam

  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into powder.
  3. Cream together salted butter, granulated sugar, and vanilla extract in a mixing bowl until light and fluffy. Beat in the egg.
  4. Gradually add all-purpose flour, baking soda, part of the strawberry powder, and kosher salt. Mix in the strawberry jam until well combined.
  5. Roll dough into small balls and place on the prepared baking sheet, spaced apart.
  6. Bake for about 8 minutes; tap the baking sheet to flatten cookies slightly before returning to bake for an additional 2–3 minutes until golden brown.
