- 5 half pint canning jars with lids and rings
Instructions
- Cut the ginger in half; cube one half and shred the other.
- Simmer cubed ginger with water for 1 hour and 15 minutes. Drain, reserving ½ cup of liquid.
- Chill the ginger in the fridge for 4 hours.
- In a large pot, combine chilled ginger, reserved water, and sugar; boil for 1 minute while stirring.
- Add liquid pectin and simmer for an additional 7 minutes, skimming off any foam.
- Sterilize jars by boiling them in water.
- Fill jars with the mixture, leaving ¼ inch space at the top; remove air bubbles and seal tightly.
- Process jars in a water bath for about 15 minutes to ensure sealing.
- Cool jars on a towel and check seals before storing.
