Ingredients

  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings


Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. Simmer cubed ginger with water for 1 hour and 15 minutes. Drain, reserving ½ cup of liquid.
  3. Chill the ginger in the fridge for 4 hours.
  4. In a large pot, combine chilled ginger, reserved water, and sugar; boil for 1 minute while stirring.
  5. Add liquid pectin and simmer for an additional 7 minutes, skimming off any foam.
  6. Sterilize jars by boiling them in water.
  7. Fill jars with the mixture, leaving ¼ inch space at the top; remove air bubbles and seal tightly.
  8. Process jars in a water bath for about 15 minutes to ensure sealing.
  9. Cool jars on a towel and check seals before storing.
