Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs with brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture; mix until just combined. Fold in grated carrots and nuts if desired.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Allow cooling completely.
