  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste


Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime zest, lime juice, dill, Dijon mustard, minced garlic, salt, and pepper.
  2. Bring a large pot of water to a boil; add shrimp and cook for 2-3 minutes until pink.
  3. Prepare an ice bath while shrimp cooks. Transfer shrimp to ice water immediately after cooking for about 3 minutes.
  4. Drain shrimp in a colander and chop into bite-sized pieces.
  5. In a large bowl, mix the chopped shrimp with diced cucumber, sliced green onions, and the prepared dressing until well coated.
