- 25 g white sugar
- 5 g salt
- 5 g yeast
- 70 g milk
- 70 g water
- 25 g unsalted butter (to mix into dough)
- 125 g unsalted butter (for lamination)
- 400 g white sugar (for coating)
Instructions
- Prepare the Butter Layer: Shape 125 g cold unsalted butter into a 5" x 13" square, wrap in parchment, and refrigerate until hard.
- Make the Dough: Combine flour, sugar, yeast, and salt in a mixing bowl. Add milk, water, and 25 g unsalted butter; mix on low speed for about 10 minutes until combined.
- Chill Overnight: Form into a ball, wrap in plastic wrap, and refrigerate overnight.
- Laminate the Dough: Roll out the dough into a rectangle double the size of the butter sheet. Place butter in the center, fold over the dough sides to encase it.
- First Fold: Roll out to triple length; fold like a book. Refrigerate for one hour.
- Repeat Folding: After chilling, repeat the folding process again and refrigerate for another hour.
- Cut into Strips: Roll out chilled dough to an 8" x 16" rectangle and cut into 12 strips.
- Assemble Cruffins: Take two strips, roll them together tightly from one end while stretching ends down; place in muffin tin.
- Proofing: Let rise in a warm area for about 2 – 3 hours until tripled in size.
- Baking: Preheat oven to 392°F; bake cruffins at reduced heat of 356°F for about 20 minutes until golden brown.
- Serve: Roll baked cruffins in sugar after cooling slightly.
