Ingredients
- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup grated parmesan cheese
- Optional: 1 cup chopped spinach
Instructions
- Season chicken breasts with salt and pepper on both sides. Heat olive oil in a non-stick skillet over medium-high heat.
- Add the seasoned chicken to the skillet, cooking for 5-6 minutes per side until golden and crispy. Remove from skillet and set aside.
- In the same skillet, lower the heat and sauté minced garlic for about 30 seconds until fragrant. Pour in the cream and stir continuously.
- Mix in Italian seasoning and parmesan cheese until smooth. If desired, add chopped spinach and simmer for 2-3 minutes.
- Return the cooked chicken to the pan, spooning the creamy sauce over each piece. Simmer together for an additional minute before serving.
