- 1½ pounds Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil

- 2 tablespoons balsamic vinegar
- 1½ tablespoons honey
- 1 teaspoon Dijon mustard (optional)
- 1 small garlic clove, finely minced (optional)
- Red pepper flakes (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Trim and halve the Brussels sprouts. Pat them completely dry.
- In a large mixing bowl, toss the sprouts with olive oil, salt, and pepper until well-coated.
- Spread the seasoned sprouts cut-side down on a parchment-lined baking sheet without overcrowding.
- Roast for 20–25 minutes, flipping halfway through cooking until golden brown and crispy.
- While roasting, prepare the glaze by combining balsamic vinegar, honey, and Dijon mustard (if using) in a small saucepan over medium heat; simmer for 2–3 minutes until thickened. Stir in garlic if desired.
