  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar (for sauce)
  • 3/4 cup fresh orange juice
  • Thinly sliced orange peel


Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Add eggs and whisk until smooth. Gradually mix in milk and water until incorporated. Stir in vanilla and melted butter; let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a ladle of batter into the skillet and swirl to cover evenly. Cook for about 1-2 minutes until edges are lightly browned; flip and cook another minute. Repeat with remaining batter.
  3. For the sauce, melt castor sugar in a separate pan until golden brown. Add butter, stir until melted, then incorporate sliced orange peel and fresh orange juice. Simmer for a few minutes until slightly thickened.
  4. Fold each crepe into quarters and layer them in the sauce pan to absorb flavors before serving warm.
