  • 4 garlic cloves, minced
  • 6 oz fresh spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese, shredded
  • 8 oz farfalle pasta (bow tie)


Instructions

  1. Preheat your oven to 400°F (200°C). On a baking sheet, toss cubed butternut squash with olive oil, salt, and pepper. Roast for 25–30 minutes until tender and caramelized.
  2. In a large pot, bring salted water to a boil. Cook farfalle pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil. Once hot, add crumbled turkey sausage and cook until browned. Add minced garlic and sauté for an additional minute.
  4. Combine roasted butternut squash with the sausage mixture in the skillet. Stir in fresh spinach until wilted. Pour in heavy cream and mix well.
  5. Add cooked pasta to the skillet; gently combine all ingredients. Top with shredded Parmesan cheese and season to taste before serving warm.
