Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz medium shell pasta
- 1 cup heavy cream
- 4 oz cream cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
Instructions
- Cook the shell pasta according to package directions until al dente; drain and set aside.
- In a large skillet over medium-high heat, heat olive oil and butter. Add chicken chunks seasoned with Cajun seasoning, garlic powder, onion powder, Italian seasoning, salt, and pepper. Sear until golden brown and cooked through (about 5-6 minutes per side). Remove from skillet.
- In the same skillet, add heavy cream and stir in cream cheese until melted. Add Parmesan cheese until thick and creamy; adjust consistency with reserved pasta water if needed.
- Combine cooked pasta with the sauce until fully coated. Stir in half of the mozzarella until melted.
