  • 1 lb boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste


Instructions

  1. Season the chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear the chicken for about 4-5 minutes per side until golden brown and cooked through. Sprinkle Parmesan cheese on top during the last minute.
  3. Cook linguine in a pot of salted boiling water until al dente. Reserve pasta water before draining.
  4. In the same skillet, melt remaining butter and sauté minced garlic for about 30 seconds. Add heavy cream and bring to a simmer, then stir in Velveeta until melted.
  5. Mix mozzarella cheese and Parmesan into the sauce until it thickens, adding reserved pasta water if needed.
  6. Combine drained linguine with the sauce in the skillet; toss gently to coat.
  7. Serve by plating the creamy linguine alongside seared chicken pieces.
