Ingredients
For the Pasta
300 g spaghetti
For the Sauce
2 tablespoons olive oil
2 chicken breasts, cubed
250 g mushrooms, sliced
3 garlic cloves, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon black pepper
Salt, to taste
1/2 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken, season with salt and black pepper, and cook for 5 to 7 minutes until golden and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms. Cook for 4 to 5 minutes until softened and lightly browned.
- Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Pour in the chicken broth and bring to a gentle simmer. Let it cook for 2 to 3 minutes to reduce slightly.
- Add the heavy cream and stir well. Allow the sauce to simmer for 5 to 7 minutes, or until it thickens to your desired consistency.
- Return the cooked chicken to the skillet and stir to coat in the sauce.
- Add the cooked spaghetti to the skillet and toss everything together until well combined. If needed, add a splash of reserved pasta water to loosen the sauce.
- Stir in the grated Parmesan cheese, if using, and adjust seasoning with additional salt and pepper to taste.
- Serve warm, optionally garnished with extra Parmesan cheese or fresh herbs.
