  • 12 oz rotini or fusilli pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve some pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning and spices until golden brown.
  3. In the same skillet, reduce heat and melt butter. Add minced garlic, then stir in heavy cream and whole milk, bringing to a simmer.
  4. Add Velveeta cubes, stirring until melted, then mix in cheddar, mozzarella, and Parmesan until thickened.
  5. Toss the cooked pasta in the sauce until well-coated. Serve with seared chicken on top.
