  • 3 lbs boneless, skinless chicken thighs
  • 2 tablespoons curry powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper or 1/2 teaspoon chili flakes
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 2 potatoes, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste


Instructions

  1. Marinate chicken thighs with curry powder, smoked paprika, garlic powder, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat. Sauté diced onions, bell peppers, and carrots until softened, about 5–7 minutes.
  3. Add marinated chicken and brown for about 5 minutes. Stir in diced potatoes and scotch bonnet pepper (or chili flakes).
  4. Pour in chicken stock and coconut milk; bring to a simmer. Cover and cook for about 20 minutes until chicken is tender.
  5. Serve hot over rice or with naan.
