  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder


Instructions

  1. In a cast iron skillet or heavy-bottomed pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic and grated ginger until fragrant.
  2. Sprinkle in curry powder, ground cumin, turmeric, and cayenne pepper (if using). Stir well for about 30 seconds to toast the spices.
  3. Add the cubed beef stew meat to the pot. Brown all sides of the beef for approximately 5 minutes.
  4. Pour in coconut milk, beef broth, and add tomato paste. Mix thoroughly until everything is well combined. Season with salt and pepper.
  5. Gently fold in chickpeas. Reduce heat to low, cover, and let simmer for about 30 minutes until beef is tender.
  6. In a mixing bowl, combine flour, yogurt, warm water, sugar, and baking powder. Knead until you have a smooth dough.
  7. Divide dough into small balls. Using a rolling pin, roll each ball into flat circles.
  8. In a hot skillet over medium-high heat, cook each naan until puffy and golden brown on both sides—about 2-3 minutes per side.
