  • 8 oz penne pasta
  • 2 cups broccoli florets (fresh or frozen)
  • 1 lb boneless, skinless chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste


Instructions

  1. Cook penne in salted boiling water until al dente. Add broccoli during the last 2 minutes of cooking. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream and chicken broth; stir in cream cheese until smooth.
  4. Mix in Parmesan, mozzarella, and seasonings until creamy. Combine with pasta, broccoli, and chicken.
  5. Garnish with parsley before serving.
