  • 3 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained


Instructions

  2. Cook macaroni in salted boiling water until al dente; drain.
  3. In a pot, melt butter over medium heat; sauté onion and garlic until soft.
  4. Stir in flour; cook for 1-2 minutes.
  5. Gradually whisk in milk and heavy cream; cook until thickened.
