  • 500g shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 red chili, sliced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 can (400ml) coconut milk
  • 1 tbsp tomato paste
  • Salt & pepper to taste
  • Fresh cilantro for garnish
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt


Instructions

  1. Rinse rice until water runs clear. Combine with water and salt in a pot, bring to boil, cover, and simmer for 15 minutes.
  2. Heat olive oil in a large pan; add onion and sauté for 3-4 minutes. Stir in garlic, ginger, and chili; cook until fragrant.
  3. Mix in curry powder, turmeric, and paprika; add tomato paste and coconut milk. Simmer for 5 minutes.
  4. Add shrimp to the sauce; season with salt and pepper. Cook for 4-5 minutes until shrimp are pink.
  5. Spoon curry over rice and garnish with cilantro.
