  • 2.5 lbs beef chuck or stew meat
  • 2 Tbsp coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 Tbsp fresh ginger
  • 2 Tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey


Instructions

  1. Gather and chop all ingredients. Cut the beef into large chunks if needed.
  2. In a large pot, heat coconut oil over medium heat. Sauté sliced onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute.
  3. Stir in red curry paste, ground cumin, turmeric, cinnamon, and optional chili flakes, cooking for an additional 2-3 minutes.
  4. Increase heat to medium-high and add beef chunks, browning them on all sides.
  5. Add coconut milk, beef broth, tomato paste, brown sugar (or honey), bringing to a boil. Lower the heat and cover, simmering for at least 2 hours until beef is tender.
  6. Serve hot over jasmine rice and garnish with fresh herbs if desired.
