  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half


Instructions

  3. In a separate bowl, whisk together instant coconut pudding mixes and half-and-half until thickened (about 2 minutes). Spread this pudding layer over the cheesecake layer.
  4. Top with an additional 8 oz of Cool Whip and sprinkle toasted shredded coconut on top. Refrigerate for at least 6 hours before serving.
