  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk


Instructions

  1. Prepare the ingredients by chopping the onion, garlic, and ginger. Cut the beef into large chunks if not pre-cut.
  2. In a large pot or Dutch oven, heat the coconut oil over medium heat and sauté the onion until translucent, about 5 minutes. Add minced garlic and grated ginger; stir until fragrant.
  3. Brown the beef chunks in the pot until they are seared on all sides.
  4. Add curry powder, turmeric, ground coriander, and chili flakes (if using), stirring to coat the beef evenly.
  5. Mix in tomato paste followed by coconut milk; bring to a simmer while stirring thoroughly.
  6. Reduce heat to low and cover; simmer for about 1.5 to 2 hours until the beef is tender.
  7. Serve hot over steamed rice or with crispy fries.
