- 1 large yellow onion, finely chopped

- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp chili flakes (optional)
- 1 tbsp tomato paste
- 1 (14 oz) can full-fat coconut milk
Instructions
- Prepare the ingredients by chopping the onion, garlic, and ginger. Cut the beef into large chunks if not pre-cut.
- In a large pot or Dutch oven, heat the coconut oil over medium heat and sauté the onion until translucent, about 5 minutes. Add minced garlic and grated ginger; stir until fragrant.
- Brown the beef chunks in the pot until they are seared on all sides.
- Add curry powder, turmeric, ground coriander, and chili flakes (if using), stirring to coat the beef evenly.
- Mix in tomato paste followed by coconut milk; bring to a simmer while stirring thoroughly.
- Reduce heat to low and cover; simmer for about 1.5 to 2 hours until the beef is tender.
