  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream


Instructions

  1. Preheat oven to 350°F (180°C). Grease two 8-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, sour cream, oil, and vanilla until smooth. Dissolve espresso powder in hot water and mix into the wet ingredients.
  3. Combine wet and dry ingredients until smooth. Divide batter between prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely before trimming tops.
  4. For the mousse base: heat 1 cup of cream with vanilla in a saucepan until steaming. Whisk egg yolks with sugar and cornstarch; temper with hot cream before returning to saucepan to thicken.
  5. Separate custard into two bowls; stir in chopped dark and white chocolate until melted. Fold whipped cream into each mixture to create mousses.
  6. Assemble by layering dark mousse over one cake layer followed by white mousse; refrigerate for 30 minutes before adding the second layer on top. Chill for at least 4 hours.
  7. To make ganache: heat remaining cream until steaming; pour over chopped milk chocolate and stir until smooth. Cool slightly before pouring over the cake.
