  • 1 cup Fresh parsley, chopped
  • 4 cloves Garlic, minced
  • ¼ cup Red apple vinegar
  • ½ cup Olive oil
  • ½ teaspoon Red pepper flakes
  • 1 cup Mayonnaise
  • ½ cup Sour cream or Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 cup Diced tomatoes
  • 2 cups Fresh greens (spinach or arugula)
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken by whisking together olive oil, minced garlic, chopped parsley, red apple vinegar, salt, and pepper in a mixing bowl. Add the chicken breasts and let marinate for at least 30 minutes.
  2. Prepare the chimichurri sauce by blending parsley, garlic, red pepper flakes, vinegar, olive oil, and salt until chunky. Set aside.
  3. Mix mayonnaise, sour cream (or yogurt), lemon juice, and minced garlic in another bowl until creamy. Chill until ready to serve.
  4. Grill the marinated chicken for about 5-7 minutes on each side until fully cooked. Let rest before slicing.
