- 300g chicken breast, cut into strips
- 1 cup sliced mushrooms
- 1 cup sliced carrots
- 1 cup sliced green bell pepper
- 2 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 cup chicken stock
- Salt & pepper to taste
- 2 cups cooked white rice
- Fresh cilantro, chopped
Instructions
- Marinate chicken strips in soy sauce, cornstarch, and sesame oil for 10 minutes.
- Mix soy sauce, honey, rice vinegar, chicken stock, salt, and pepper in a small bowl to create the sauce.
- Heat vegetable oil in a wok over medium-high heat and stir-fry marinated chicken until lightly browned (5-7 minutes). Set aside.
- In the same wok, sauté minced garlic briefly before adding carrots, mushrooms, and green bell peppers. Stir-fry until tender-crisp (about 3-4 minutes).
- Return chicken to the wok and pour in the sauce; stir until well coated and heated through (2-3 minutes).
- Serve over warm cooked rice and garnish with chopped cilantro.
