Ingredients

  • 1 lb boneless, skinless chicken breast
  • 12 oz chow mein noodles
  • 2 cups cabbage
  • 1 large carrot (julienned)
  • 1/2 batch green onions
  • 2 garlic cloves
  • 4 Tbsp oyster sauce (or alternative)
  • 3 Tbsp low sodium soy sauce
  • 3 Tbsp light sesame oil
  • 1/2 cup chicken broth
  • 1 Tbsp corn starch
  • 1 Tbsp granulated sugar


Instructions

  1. In a mixing bowl, whisk together oyster sauce, sugar, sesame oil, soy sauce, chicken broth, and cornstarch. Set aside.
  2. Cook chow mein noodles according to package instructions; drain and rinse with cold water.
  3. Heat oil in a large wok or pan over medium heat. Cut chicken into bite-sized strips and sauté until golden brown; remove from pan.
  4. In the same pan, sauté julienned carrots, cabbage, and garlic until vegetables soften.
  5. Return cooked chicken and drained noodles to the pan; pour in the prepared sauce and stir-fry for another 2 minutes until combined.
  6. Garnish with chopped green onions before serving hot.
