  • 500g chicken breast, thinly sliced
  • 2 cups broccoli florets
  • 200g mushrooms, sliced
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 cups cooked white rice


Instructions

  1. Cook the rice according to package instructions and keep warm.
  2. Heat vegetable oil in a wok or skillet over medium-high heat and add the sliced chicken. Cook until lightly golden on all sides, then remove from the pan.
  3. In the same pan, sauté onion and garlic until fragrant. Add broccoli and mushrooms; stir-fry for about 3-4 minutes until tender-crisp.
  4. Return chicken to the pan and pour in soy sauce, hoisin sauce, stirring to combine.
  5. Add cornstarch slurry and cook while stirring until the sauce thickens slightly.
  6. Serve over warm cooked rice.
