Ingredients
- 2 slices of chicken bacon
- 3 shallots
- 1 carrot
- 2 small stalks of celery
- 3 cloves of garlic
- 400g extra lean beef mince (ground beef)
- 400g chopped tomatoes (canned)
- 3 tablespoons tomato paste
- 240ml chicken or beef stock
- 500g pack of gnocchi
- 120g mature cheddar cheese
Instructions
- In a frying pan, spray olive oil and sauté chopped chicken bacon until golden brown. Set aside.
- In the same pan, add diced shallots, carrot, and celery; cook until softened.
- Add crushed garlic and ground beef; cook until browned.
- Stir in chicken bacon, mixed herbs, canned tomatoes, tomato paste, stock, and balsamic vinegar; bring to a boil.
- Simmer covered for about 20 minutes until sauce thickens.
- Stir in gnocchi; simmer for an additional 5-8 minutes until cooked through.
- Season to taste with salt and black pepper.
- Transfer to a baking dish, top with grated cheddar cheese, and broil until golden brown.
- Garnish with fresh basil before serving warm.
