  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add garlic and sauté briefly.
  2. Add ground beef, breaking it up as it browns (about 5-7 minutes). Drain any excess fat.
  3. Stir in black beans, diced tomatoes, taco seasoning, salt, and pepper. Simmer for 5 minutes.
  4. Cook tortellini in boiling water according to package instructions; drain.
  5. Preheat oven to 350°F (175°C). Combine tortellini with beef mixture in a bowl.
  6. Spread some enchilada sauce in a baking dish; layer the mixture and top with remaining sauce and shredded cheese.
  7. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10-15 minutes until bubbly.
