  • 17.5 ounce package chocolate chip cookie mix
  • ½ cup salted butter, softened
  • 1 large egg
  • 24 Oreos
  • 16 ounces cream cheese, softened
  • 1 ⅓ cup powdered sugar
  • 1 Tablespoon cornstarch
  • ⅔ cup sour cream
  • 2 large eggs
  • 1 ⅓ cups rough chopped Oreos (divided)


Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine the cookie mix, softened butter, and one egg until well blended.
  3. Press the cookie dough evenly into the bottom of the prepared baking pan.
  4. Layer the Oreos on top of the cookie dough.
  5. In another bowl, mix cream cheese, powdered sugar, and cornstarch until fluffy; then add sour cream.
  6. Mix in eggs one at a time until just combined; fold in ⅔ cup chopped Oreos.
  7. Spread the cheesecake mixture over the Oreos evenly, topping with remaining chopped Oreos.
  8. Bake for 35-40 minutes or until set (around 150°F). Cool completely on a wire rack before refrigerating for at least three hours.
  9. Cut into squares and serve with optional caramel drizzle.
